After at least 65 days of ripening, this blue cheese has a nice mild taste and a creamy, smooth texture. The cheese is not as sharp as the roquefort, but it does have a strong taste. The cheese is delicious on a cheese board with a glass of red wine or port and also delicious in cheese sauce.
