About this cheese
Raclette is a traditional Swiss dish, derived from the French word "racler" which means to scrape. During the "summer" of the cattle in the mountains, the herdsmen's ration was limited to homemade bread, dried meat and hard cheese. For a hot meal, the cheese was roasted over a fire, the melted cheese scraped off (racler) and eaten with bread. Today, raclette with cheese fondue is one of the most popular Swiss national dishes. Emmi Raclette is made from 100% Swiss Raclette cheese. The cheese matures between two months and three months for optimal taste and has a beautiful red-brown rind.
