Manchego (or Queso Manchego) is a Spanish cheese from the La Mancha region, made from the milk of the Manchega sheep breed. The cheese has a registered protected designation of origin and, since 2007, also the stricter, Spanish variant denominación de origen. Manchego is a pressed cheese with a slightly spicy and salty taste, which is consumed after 60 days to two years of ripening, often as tapa, but also processed in dishes.
