Mahon is a traditional cheese from the island of Menorca, for which raw or pasteurized cow's milk is used. A maximum of 5% sheep's milk may be added. The shape of the Mahon is reminiscent of a cushion. The cheese is sold in different ripening stages. For cheeses older than 1 month, the crust is regularly rubbed with a mixture of olive oil and mild paprika. Mahon is especially delicious as an aperitif, together with some olives.

Mahon is een traditionele kaas van het eiland Menorca, waarvoor rauwe of gepasteuriseerde koemelk wordt gebruikt. Er mag maximaal 5% schapenmelk aan toegevoegd worden. De vorm van de Mahon doet aan een kussentje denken. De kaas wordt in verschillende rijpingsstadia verkocht. Bij kazen ouder dan 1 maand wordt de korst regelmatig ingewreven met een mengsel van olijfolie en mild paprikapoeder. Mahon is vooral lekker bij het aperitief, samen met wat olijven.
