Le Cabrissac is an excellent dessert cheese made from pure goat's milk from the Pays de la Loire, located in the West of France. What is characteristic of many types of French goat cheese is the maturation in ash. This ash is taste neutral, but provides excellent 'insulation'. Thanks to the insulation, all the good taste properties of the milk are preserved. With goat milk, this mainly concerns purity and a fresh, surprisingly accessible character. Le Cabrissac is distinguished by the addition of a touch of cream, which makes the cheese intensely soft and provides a tempting taste. This is pre-eminently a specialty that is suitable for a cheese plate. Delicious in combination with a smooth red wine, but also surprisingly delicious with a dark abbey beer and even with green tea.
