Blue cheese made on cow's milk. Stored between 9 and 14 weeks. The cheese is said to have been first served in the early 1700s to travelers between York and London at a small inn called the Bell Inn in the town of Stilton. The cheese can only be produced in Leicestershire, Nottinghamshire and Derbyshire.
In terms of taste, this is a full blue cheese with butter, cocoa and walnut. Port wine can sometimes overwhelm a good stilton. Try this with the combination of sweet wine like Montbazillac.
