De fruitige smaak van Cantal kreeg al snel succes en zo verwierf het snel zijn faam. Vandaag komt deze unieke kaas nog steeds uit hetzelfde gebied. De vorm van Cantal en zijn consistentie zijn te danken aan de dubbele persing. De textuur is korrelig en de smaak is soepel.
