This powerful French Alpine cheese is over a year and a half old. The Beaufort d'été is prepared from raw milk and is a real Alpage cheese. Milk from the Tarentaise cows, originally an Indo-Asian breed, is used for the preparation. The cows graze in the French Savoie. 12 liters of milk are used for a kilogram of cheese; this is more than a liter more than for the average cheese. The taste of the cheese is complex with many nut tones, the smell is powerful.
